Apple pie, caramel and roasted hazelnut

Roasted hazelnuts

  • 20 gr whole hazelnuts

Pear & apple sauce

  • 2 pears
  • 1 apple

Almond shortbread crust

  • 250 gr flour
  • 5 gr maizena cornflour
  • 50 gr almond powder
  • 40 gr sugar
  • 1 pinch salt
  • 120 gr butter diced
  • 40 gr sugar
  • 1 egg


  • 3 apples


  • 100 gr sugar
  • 2 tbsp water


Pear & apple sauce

  • Peel apple and pears. Cut and cook them in a little bit of water until they are ready. Blend or crush with a fork. Put aside.

Roasted hazelnuts

  • Preheat oven to 200°C. Place hazelnuts on a baking tray and roast for 15 minutes. Peel and mix.

Almond shortbread crust

  • Mix flour, cornflour, almond powder, sugar and salt. Add diced butter and the egg. Knead until you get a smooth dough.
  • Spread dough in a baking circle. Let stand approximately 1 hour in the refrigerator if the dough is too difficult to work.
  • Prick with a fork. Spread pear and apple sauce.
  • Peel and cut apples in thin slices. Arrange the apples on top of the pie.
  • In a small saucepan, heat sugar with 2 tablespoons of water. Do not mix. At best turn the pan slightly. Wait for the sugar to become liquid and color, turn into a caramel, then pour over the pie.
  • Sprinkle with some roasted hazelnuts.
  • Preheat oven to 200°C and bake for approximately 30 minutes.
