Marie Louise is my grandmother’s name. The mother of my own mother. But we call her Marie Lou and we used to call her Mamie Foulangue when she was still living in the north of France. Mamie means grandmother in French and Foulangue is the name of the village where she lived for years. That’s why.
Together with my grandfather, they were taking care of the park and mansion of a huge property in the village. In counterpart, they were living in a little house next to the main residence and could use a large part of the land for their own benefit. They had a huge garden where they were growing every kind of vegetables you can possibly imagine and this recipe come from there.
My grandmother was making the potatoes grow for several months with love and … water. Of course. I always felt lucky to be able to hang there and eat daily fresh vegetables. Then I was picking the potatoes with my Mamie Foulangue and was coming the time to cook for my grandfather and me.
I never really understood how she could make these delicious roasted potatoes. Soft and crispy at the same time. Until I got the recipe to share it with you. She boils potatoes first for few minutes for the softness. I let you discover the recipe below. Easy, fast, delicious, nothing more.
- 600 gr. of potatoes (1.30 lb.)
- 1 bouquet garni
- 1 teaspoon of salt
- 3 tablespoons of olive oil
- Fill a casserole dish with water. Add bouquet garni and salt. Bring to a boil.
- Peel and slice potatoes. Wash sliced potates.
- Put potatoes in boiling water for 10 minutes. Drain.
- Heat a non sticky pan with olive oil. Put potatoes and cook for 15 to 20 minutes stiring regularly.
